Costa Vida Fresh Mexican Grill Set to Replace Lion’s Choice in Liberty Commons

After the closure of Lion’s Choice in May, Liberty residents won’t have to wait much longer to see a new tenant fill the spot. Costa Vida Fresh Mexican Grill, a Utah-based fast-casual restaurant chain known for its made-from-scratch menu and coastal-inspired flavors, is slated to open in late February or early March at 129 S. Stewart Road in the Liberty Commons shopping center.

The former Lion’s Choice location already includes a drive-thru, which Costa Vida plans to keep — an appealing feature for busy diners on the go.

Founded in Utah in 2003, Costa Vida has grown to nearly 100 locations nationwide, including nearby spots in Lee’s Summit and Overland Park. The restaurant is known for its hand-rolled tortillas, slow-cooked meats, and especially its signature Sweet Pork, which is slow-roasted for a full 24 hours.

The menu features a range of options including burritos, enchiladas, quesadillas, tacos, rice bowls, nachos, and salads, along with chicken tortilla soup and desserts like key lime pie, tres leches, and cinnamon tortes. Guests can also order queso with chips and house-made horchata, as well as kids’ meals.

A Liberty Commons leasing agent and Costa Vida general manager both confirmed the restaurant’s plans to move in, with construction and remodeling expected to begin soon.

The arrival of Costa Vida marks another addition to Liberty Commons’ lineup of restaurants and shops — and gives Northland diners a fresh new option for fast-casual Mexican fare.
