Chef Jonathan Justus and Camille Eklof, renowned for Justus Drugstore, are opening The Parker Hollow in Parkville, Missouri. The Parker Hollow—set in a charmingly ancient building—is apparently the place to get Hog Island oysters without that pesky ocean nearby. Set in a historic building, the seafood-focused restaurant will feature sustainable West Coast offerings, including a raw bar with selections from Hog Island Oyster Co. The venue will also offer land-based dishes. Slated to open September 2025, it's perfect for those craving a taste of the Pacific... two thousand miles from it.
