Betty Rae’s, the Kansas City ice cream darling known for making grown adults line up like kids after Little League, is opening a brand-new shop in early 2026 at 9711 N. Ash Ave., Suite B. in Liberty. That’s right — no more driving to Waldo or Prairie Village just to satisfy that gooey butter cake craving.
If you’ve never been, Betty Rae’s is part classic ice cream parlor, part flavor lab. They serve 26 house-made staples, from tried-and-true vanilla bean and chocolate to curveballs like cereal milk, lavender honey, and S’mores. It’s the kind of menu where you think you’ll play it safe, then suddenly you’re Instagramming a cone that tastes like breakfast cereal.
Seasonals are where things get really fun: pumpkin cheesecake, Monster Mash, German chocolate cake, and apple cider donut are all in the rotation.
